1 day course

With a tuscan flavour The Fattoria del Colle organises 7, 3 or 1 day courses. The tutor Helle Poulsen Tesio, teaches Tuscan gastronomic culture with an attentive eye to novelty as well as the recovery of old recipes.
The cooking classes are alternated wit wine and oil tastings and guided visits to the vineyards and to the historic areas of the farm. A pleasant way to learn a great deal about Tuscan civilisation.

Helle Poulsen Tesio. Gastronomy author of 8 books of Italian cuisine and teacher at the school “A tavola con lo chef” in Rome.

Italian, English, Danish (possibility of interpreter for German and French)

Programs:
10.00 am
Guided tour of the Fattoria del Colle: medieval hermitage, coat of arms hall, sixteenth century kitchen, baker’s room, Grand-duke bedroom.
10.30 am
Guided tour of Chianti vineyards and olive groves: an agronomer will show the participants how to plant and grow a vineyard capable of producing high quality grapes and the difference between the various varieties of vines.
11.00 am
Guided tasting of extra virgin olive oil
11.30 am
Demonstration of a typical Tuscan meal: Crostini, Home made pasta - the cooks show how the pasta dough is made, Scottiglia (stew), Medici Duck (Renaissance recipe of the Medici court), Whipped ricotta
1.30 pm
Lunch with the dishes prepared in the morning accompanied by the estate wines.
3.00 pm
Dessert Demonstration: Almond cake, Cantucci, Ricciarelli
5.00 pm
Guided Tasting with glasses and tasting cards, Distribution of cards describing each wine, Guided tasting techniques, Trying out Chianti DOCG, Vino Nobile di Montepulciano DOCG, Brunello di Montalcino DOCG
6.00 pm
Snack with the cakes and biscuits prepared during the afternoon and Vin Santo.
